  • 500 g strong flour
  • 60 g sugar
  • 7 g instant yeast
  • Pinch salt
  • 250 ml warm milk
  • 2 eggs
  • 60 g unsalted butter, soft
  • 1 litre oil for frying
  • 100 g granulated sugar to coat
  • 1 litre soft-serve ice cream

iii. Method

  1. Make dough; prove 60 min.
  2. Roll out 1 cm thick. Cut into long strips (4 × 30 cm).
  3. Wrap each strip around a metal cone mould (wrapped in foil for non-stick).
  4. Prove 20 min. Fry at 170 °C with the mould still inside; about 90 sec per side.
  5. Drain; carefully remove mould while still hot. Roll the cone in granulated sugar.
  6. Fill with soft-serve ice cream; top with sprinkles or sauces.
