Kremna Rezina — Slovenian custard slice from Bled
Kremna rezina — "cream slice" — is the canonical dessert of Bled, Slovenia: two layers of crisp puff pastry sandwiching a thick vanilla custard and a generous slab of whipped cream. The cross-section shows clean horizontal stripes, dusted with icing sugar. The Park Hotel in Bled has made roughly fifteen million of them since 1953.
i. Origin & history
Kremna rezina is the Slovenian member of a family of central European cream slices — Polish kremówka, Austrian cremeschnitte, Hungarian krémes — that share an Austro-Hungarian inheritance. The Bled version is the most famous internationally.
ii. Ingredients

- 1 sheet puff pastry (about 40 × 30 cm), cut into two squares
- 2 tbsp icing sugar
- 1 litre whole milk
- 8 egg yolks
- 150 g caster sugar
- 80 g cornstarch
- 2 vanilla pods, split, or 2 tsp vanilla extract
- 20 g unsalted butter
- 500 ml double cream
- 2 tbsp icing sugar (cream)
- Icing sugar to dust
iii. Method
- Bake the two puff pastry squares at 200 °C for 18-20 min until deeply golden. Cool.
- Make custard: warm milk with vanilla. Whisk yolks, sugar and cornstarch; temper with warm milk; cook to a thick custard. Stir in butter. Cool with cling film on the surface.
- Whip cream with icing sugar to soft peaks.
- Assemble: place one pastry square in a 20 cm square frame. Pour over the cooled custard in a thick layer. Top with the whipped cream in another thick layer. Cover with the second pastry square.
- Chill 6 hours minimum. Dust with icing sugar; slice with a serrated knife in a single firm motion.

- Read the method through first. Several steps must be ready in advance.
- Season patiently. Sweetness and salt are tuned at the end, not the start.

Bled version is the canonical. Krémes in Hungary is the close cousin. Polish kremówka reverses some proportions. Modern variations add fruit between the cream and pastry.
