  • 250 ml double cream

  • 2 tsp lemon juice
  • 8 g gelatin (for cheese layer)
  • 400 g mango purée (fresh or thawed frozen)
  • 2 tbsp caster sugar
  • 6 g gelatin (for mango layer)
  • Fresh mango slices to top

iii. Method

  1. Crush biscuits; mix with melted butter; press into a 22 cm springform tin. Chill.
  2. Bloom 8 g gelatin in cold water. Melt over hot water.
  3. Beat cream cheese, sugar and vanilla. Whip cream to soft peaks; fold into the cheese. Mix in lemon, zest and bloomed gelatin.
  4. Pour over the base; smooth; chill 3 hours until just-set.
  5. Bloom 6 g gelatin; melt. Mix mango purée with sugar and gelatin. Cool to room temp; pour over the cheesecake.
  6. Chill 4 hours until fully set. Top with fresh mango slices.
