Rava Kesari — saffron semolina pudding
Rava kesari is a South Indian semolina sweet — coarse semolina toasted in ghee, then cooked with hot sugar syrup, saffron, cardamom and a scatter of cashews and raisins. It is bright orange-yellow, rich, and is the canonical temple sweet of Tamil Nadu, Karnataka and Andhra.
i. Origin & history
Rava kesari is the southern counterpart of sooji halwa — same technique, more saffron, smaller serving. It is often given as prasadam in South Indian temples.
ii. Ingredients

- 200 g coarse semolina (rava)
- 150 g ghee
- 250 g sugar
- 800 ml water
- Large pinch saffron, steeped
- 6 cardamom pods, crushed
- 2 tbsp cashews, halved
- 1 tbsp raisins
- Pinch salt
- Pinch food-grade orange colour (traditional)
iii. Method
- Heat 2 tbsp ghee. Fry cashews until pale; fry raisins until plump. Set aside.
- In the same pan, add remaining ghee and the semolina. Toast over medium heat 5-6 min until golden and fragrant.
- Bring water, sugar, cardamom, salt and colour to a simmer.
- Pour syrup into the toasted semolina (stand back — it spits). Stir vigorously; cook 4 min until thick and glossy.
- Stir in saffron. Top with fried cashews and raisins. Serve warm.

- Use the freshest ingredients you can. The recipe relies on them.
- Read the method through first. Several steps must be ready in advance.
- Season patiently. Sweetness and salt are tuned at the end, not the start.
