- 1 tsp vanilla
- 500 ml whole milk
- 100 g muscovado sugar
- 3 eggs
- 2 tsp cinnamon
- 60 g raisins
- 30 g chopped pecans
iii. Method
- Make zucchini bread: mix grated zucchini with eggs, oil, sugar; fold in flour, cinnamon, baking powder, soda, salt, vanilla. Bake at 170 °C in a loaf tin for 50 min. Cool. Cube.
- Pile cubed bread in a 22 × 30 cm baking dish.
- Whisk milk, sugar, eggs and cinnamon. Pour over bread; press to soak; let stand 15 min.
- Scatter raisins and pecans. Bake at 170 °C for 40-45 min until set.
