Berry Soufflé — fresh berry soufflé
A berry soufflé is a French dessert: a fruit purée enriched with egg yolks and lightened with stiff egg whites, baked in ramekins until risen and just-set. It is dramatically light, slightly sour, and the colour of whatever berry you use.
i. Origin & history
Soufflés are technically demanding — you must serve them within 60 seconds of leaving the oven before they collapse. They are one of the great show pieces of French restaurant patisserie.
ii. Ingredients

- 400 g raspberries (or mixed berries)
- 100 g sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 2 egg yolks
- 5 egg whites
- 60 g caster sugar
- Pinch salt
- Extra butter and sugar for the ramekins
- Icing sugar to dust
iii. Method
- Heat oven to 200 °C. Butter and sugar 6 ramekins thoroughly.
- Purée berries; strain to remove seeds.
- Cook purée with 100 g sugar and cornstarch (slaked in 1 tbsp water) over medium heat, stirring, until thickened. Cool. Stir in lemon juice and yolks.
- Whip whites with salt; add 60 g sugar gradually; whip to stiff glossy peaks. Fold a third into the berry base, then the rest.
- Spoon into ramekins to the rim. Bake 12-14 min until risen tall.
- Dust with icing sugar; serve immediately.

- Use the freshest ingredients you can. The recipe relies on them.
- Read the method through first. Several steps must be ready in advance.
- Season patiently. Sweetness and salt are tuned at the end, not the start.

Raspberry soufflé is the classic. Blackcurrant soufflé is more intense. Strawberry soufflé is softer-flavoured. Passion-fruit soufflé is dramatic.
