White Chocolate Mousse — light white-chocolate cream

White chocolate mousse is a light, sweet, vanilla-rich mousse made from melted white chocolate folded into whipped cream and stabilised with gelatin or egg whites. It is creamier and sweeter than dark chocolate mousse and pairs well with sharp fruit — passion fruit, raspberry, citrus.

i. Origin & history

White chocolate (which contains no cocoa solids, only cocoa butter) was invented by Nestlé in 1936. Its use in mousse is more recent — most modern white chocolate mousse recipes date from the 1980s onwards.

ii. Ingredients

  • 200 g good white chocolate, chopped
  • 250 ml double cream
  • 2 egg yolks
  • 60 ml whole milk
  • 6 g leaf gelatin
  • 2 egg whites
  • 30 g caster sugar
  • Pinch salt
  • Fresh berries to top

iii. Method

  1. Soak gelatin in cold water 5 min.
  2. Warm milk; off heat dissolve squeezed gelatin. Pour over chopped chocolate; let stand 1 min; stir smooth. Cool to lukewarm.
  3. Whisk yolks into the white chocolate mixture.
  4. Whip cream to soft peaks; fold into chocolate base.
  5. Whip egg whites with sugar and salt to soft glossy peaks; fold into mousse in three additions.
  6. Spoon into 6 glasses. Chill 4 hours. Top with berries.

  • Read the method through first. Several steps must be ready in advance.
  • Season patiently. Sweetness and salt are tuned at the end, not the start.
