- 250 g dark chocolate, chopped
- 250 ml double cream
- 100 g hazelnut praline paste

- 60 g toasted hazelnuts, halved
- Fleur de sel

- Warm cream to just below simmer.
- Pour over chopped chocolate; rest 2 min; stir to smooth ganache. Stir in praline paste and butter.
