ii. Ingredients

- 1 sheet shortcrust pastry, blind-baked in a 23 cm tart tin
- 150 g ground almonds
- 150 g unsalted butter, soft
- 150 g caster sugar
- 3 eggs
- 1 tbsp pomegranate molasses (in filling)
- Zest of 1 orange
- 4 tbsp pomegranate molasses (glaze)
- 1 tbsp honey
- Seeds of 1 fresh pomegranate
iii. Method
- Cream butter and sugar. Beat in eggs one at a time. Fold in ground almonds, 1 tbsp pomegranate molasses, and orange zest.
- Spread into the blind-baked tart shell. Bake at 170 °C for 25-30 min until golden and just set.
- Warm 4 tbsp pomegranate molasses with the honey; reduce 2 min to a thick glaze. Brush over the warm tart.
- Cool, then scatter generously with fresh pomegranate seeds just before serving.
