ii. Ingredients

- 200 g ground pistachios
- 100 g semolina
- 100 g plain flour
- 250 g caster sugar
- 200 g unsalted butter, soft
- 4 eggs
- 2 tbsp rosewater
- 1 tsp cardamom
- 1 tsp baking powder
- Pinch salt
- 250 ml plain yoghurt
- 200 g icing sugar
- 3 tbsp rosewater
- 1 drop red food colour
- 30 g chopped pistachios
- Edible rose petals
iii. Method
- Heat oven to 170 °C. Grease and line a 22 cm round tin.
- Cream butter and sugar; beat in eggs and rose water.
- Fold in ground pistachios, semolina, flour, baking powder, cardamom and salt alternately with yoghurt.
- Bake 45-50 min until risen and just-set.
- Cool. Mix icing sugar with rose water and food colour; drizzle over cooled cake. Scatter pistachios and rose petals.
