ii. Ingredients

  • 200 g ground pistachios
  • 100 g plain flour
  • 150 g caster sugar
  • 200 g unsalted butter, soft
  • 4 eggs
  • 2 tbsp rose water
  • 1 tsp ground cardamom
  • 1 tsp baking powder
  • Pinch salt
  • Zest of 1 lemon
  • 200 g icing sugar
  • 2 tbsp rose water
  • 1 tbsp lemon juice
  • Drop of red food colour
  • 30 g pistachios, chopped
  • Edible dried rose petals

iii. Method

  1. Heat oven to 170 °C. Grease and line a 22 cm round tin.
  2. Cream butter and sugar 3 min. Beat in eggs, rose water and zest.
  3. Fold in ground pistachios, flour, baking powder, cardamom and salt.
  4. Bake 40-45 min until risen and just-set.
  5. Cool fully. Mix icing sugar with rose water, lemon juice and food colour to a pourable glaze. Drizzle over the cake; scatter pistachios and rose petals.
