i. Origin & history
The chewy texture comes from salep — orchid-tuber starch — traditionally added to the base, which gives bastani its distinctive cool elasticity. Outside Iran salep is hard to find and is usually replaced with cornstarch or mastic.
ii. Ingredients

- 500 ml whole milk
- 500 ml double cream
- 200 g sugar
- 2 tsp salep powder (or 2 tsp cornstarch)
- Large pinch saffron, steeped in 2 tbsp hot water
- 2 tbsp rosewater
- Pinch salt
- 100 g clotted cream, frozen and chopped
- 60 g pistachios, chopped
iii. Method
- Whisk salep (or cornstarch) with 200 ml cold milk.
- Bring remaining milk, cream and sugar to a simmer.
- Whisk in slurry. Cook over low heat, stirring, until just thickened — about 4 minutes. Off heat, stir in saffron, rose water and salt.
- Chill 4 hours.
- Churn until thick. Fold in clotted cream shards and most of the pistachios.
- Freeze 3 hours; serve with remaining pistachios.

- Read the method through first. Several steps must be ready in advance.
- Season patiently. Sweetness and salt are tuned at the end, not the start.
