Chocotone — Brazilian chocolate panettone

Chocotone is the Brazilian chocolate version of Italian panettone: a tall, soft, enriched bread studded with chocolate chips instead of candied fruit. It is the canonical Brazilian Christmas bread, sold in tall paper-wrapped cylinders at every supermarket from October onwards.

i. Origin & history

Chocotone emerged in Brazil in the 1980s as a riff on traditional panettone, adapted to Brazilian taste for chocolate. The Bauducco brand is the canonical commercial version; home-baked chocotone is increasingly popular.

ii. Ingredients

  • 500 g strong flour
  • 60 g sugar
  • 7 g instant yeast
  • 1 tsp salt
  • 250 ml warm milk
  • 3 eggs
  • 2 yolks
  • Zest of 1 orange
  • 150 g unsalted butter, soft
  • 1 tsp vanilla
  • 200 g dark chocolate chips
  • Egg wash

iii. Method

  1. Mix flour, sugar, yeast, salt. Add milk, eggs, yolks, vanilla, zest; mix and knead 10 min; gradually knead in soft butter (the dough is enriched and takes time).
  2. Prove 90 min until at least doubled.
  3. Knock back; fold in chocolate chips. Shape into a tall ball; place in a 1 kg panettone paper case.
  4. Prove another 90 min until risen to the top of the case.
  5. Brush with egg wash. Bake at 170 °C for 40-50 min until deeply golden — internal temperature 90 °C.
  6. Hang the cooled panettone upside down (pierce with skewers) overnight to prevent collapse — Italian technique that Brazilian bakers also use.

iv. Tips & common mistakes

  • Use the freshest ingredients you can. The recipe relies on them.
  • Read the method through first. Several steps must be ready in advance.
  • Season patiently. Sweetness and salt are tuned at the end, not the start.

Panettone (Italian) is the ancestor with candied fruit. Chocotone com goiabada includes guava paste. Pistachio chocotone is a contemporary variant.
