Rosca de Reyes — Three Kings' Day ring cake
Rosca de Reyes — "Kings' ring" — is the canonical Three Kings' Day (Epiphany, 6 January) cake across Spain and Latin America: a sweet enriched-bread ring decorated with candied fruit and pearl sugar, with a small figurine of baby Jesus hidden inside. Whoever finds the figurine in their slice has a year of good luck (and must host the Candlemas party).
i. Origin & history
Rosca de Reyes has been baked in Spain since at least the 13th century. The tradition travelled across the Spanish-speaking world; the Mexican version is particularly elaborate.
ii. Ingredients

- 500 g strong flour
- 100 g sugar
- 7 g instant yeast
- 1 tsp salt
- 250 ml warm milk
- 3 eggs
- 100 g unsalted butter, soft
- Zest of 1 orange
- 2 tbsp orange-flower water
- 1 small ceramic figurine (or dried bean) of baby Jesus
- Candied orange, candied cherries, candied lime, candied figs
- Pearl sugar
- Egg wash
iii. Method
- Make dough; prove 90 min until doubled.
- Knock back; shape into a long rope; join into a ring; place on a tray.
- Press the ceramic figurine deep into the underside.
- Prove 30 min. Brush with egg wash; decorate with candied fruit and pearl sugar.
- Bake at 180 °C for 25-30 min until deeply golden.

- Use the freshest ingredients you can. The recipe relies on them.
- Read the method through first. Several steps must be ready in advance.
- Season patiently. Sweetness and salt are tuned at the end, not the start.

Mexican rosca de reyes often includes a sweet butter-paste topping. Spanish roscón is the canonical Iberian version. French galette des rois is the close cousin (puff pastry, frangipane, hidden fève).
