i. Origin & history

Magic cake (prajitura magica) is a relatively modern Romanian and Hungarian invention popular through the 2010s. The three-layer separation comes from the high egg-white-to-yolk ratio and a specific baking temperature.

ii. Ingredients

  • 125 g unsalted butter, melted
  • 1 tsp vanilla
  • 4 eggs, separated
  • 150 g caster sugar
  • Pinch salt
  • 115 g plain flour
  • 500 ml warm milk
  • Zest of 1 lemon
  • Icing sugar to dust

iii. Method

  1. Heat oven to 160 °C. Line a 20 cm square tin.
  2. Whisk yolks with sugar, vanilla, zest until pale. Whisk in melted butter, then flour, then warm milk gradually to a thin smooth batter.
  3. Whip whites with salt to stiff peaks. Fold gently into batter — some white streaks should remain.
  4. Pour into the tin. Bake 60-70 min until top is golden and just-set; the cake will wobble slightly.
  5. Cool fully (2 hours). Refrigerate. Cut into squares; dust with icing sugar.
