Coconut-milk Persian ice cream is a modern adaptation, common in Iranian-diaspora kitchens where dietary restrictions or lactose intolerance call for a dairy-free version. The saffron and rose carry the recipe; the substitution of coconut is barely perceptible.
ii. Ingredients

- 800 ml full-fat coconut milk
- 200 g caster sugar
- 2 tsp cornstarch
- Large pinch saffron, steeped in 2 tbsp hot water
- 2 tbsp rosewater
- Pinch salt
- 60 g pistachios, chopped
iii. Method
- Whisk cornstarch with 100 ml of the coconut milk.
- Bring remaining coconut milk and sugar to a simmer. Whisk in slurry; cook 4 min to thicken slightly. Off heat, stir in saffron, rose water and salt.
- Chill 4 hours.
- Churn; freeze 3 hours; serve with pistachios.
